Success: First Raw Taco Night with Family

On a recent visit with the family, our traditional chicken taco night cropped up. As a vegetarian, I usually made it through Taco night with black beans. I was pretty sure I could figure it out raw as well; I decided to attempt to eat both raw and organic while largely joining in with the family. I packed a couple items for myslef (and organic avacado, a couple lettuce leaves to use as shells and a piece of fruit) along with these recipes.

Walnut Meat - This is a hearty meat-like recipe that only takes a few minutes to grind and mix. Mix the following:

I also wanted to bring along a raw dish that everyone would like (and wouldn’t find too frightening). The answer: pico de gallo - of sorts.

The nigth was definitely a success. I was able to have a fun dinner with the family while staying raw and vegan - and my Dad has since requested the salsa again and my Mom has inquired about the recipe!
